Thali® sauces are made using a combination of spices that give it the distinctive flavours and aroma of a traditional Indian meal. Our preparations are mild to medium on the spice scale, although their intensity can easily be increased or decreased to suit individual preference. The spices we have used include the following:

Cumin seeds - a basic Indian spice, which is used for its strong but very pleasing flavor, and digestive properties

Turmeric - a basic Indian spice, which is used mainly for its medicinal properties, and the lovely color that it gives to the dishes

Coriander seeds - a basic Indian spice, which is used mainly for its fresh, cooling and soothing taste

Chili Powder - now a basic Indian spice, which is used mainly for its fiery taste

Mustard seeds - a basic Indian spice, which is used for its strong but very pleasing flavor, and good digestive properties

Asafetida - a basic Indian spice, which is used as a digestive and for its flavor

Fennel seeds - a basic but not essential Indian spice, which is used for its strong but very pleasing flavor and digestive properties

Fenugreek - a basic but not essential Indian spice which is actually a lentil that is used for its strong, bitter taste and wonderful healthful properties

Dried Ginger - a basic but not essential Indian spice, which is used for its warming properties and wonderful aroma and taste

Nigella seeds (Kalonji) - a basic but not essential Indian spice, which is used for its strong but very pleasing flavor and digestive properties

Green cardamom pods (eliachi) - a secondary and not essential Indian spice, which is used for its strong but very pleasing flavor. It is one the spices in Garam masala

Black cardamom (kala eliachi) - a secondary and not essential Indian spice, which is used for its mellow and warm flavor

Cinnamon (dalchini) - a secondary and not essential Indian spice, which is used for its sweet and pleasing flavor

Cloves - a secondary and not essential Indian spice, which is used for its pleasing flavor

Nutmeg - a secondary and not essential Indian spice, which is used for its warm and pleasing flavor

Garam masala - a powdered blend of spices that may include cloves, cardamom, cinnamon, black peppercorns, nutmeg, mace

Garlic - a basic Indian seasoning, which is used for its strong and satisfying flavor

Mint leaves – used for its fresh, cooling taste and is excellent with warming spices
